Pan Fried Trout (Martin P.)

Dill, fresh

Eggs – 2-4, beat them

Panko crumbs – Ian’s

Citrus Salt

Flour (optional)


Dip in flour (or not), then egg, then Panko crumbs.  Cooked in a little olive oil in a cast iron skillet over a TLUD, outside!  I don’t “fry” very often, but fresh rainbow trout from Arkansas begs to be fried.  I think leaving out the flour makes them pick up less oil, these were wonderful, caught by Johnnie C. and myself, October 2013.   Oh, and thanks to Karyn S. for helping me with this!
