Quinoa (Norma F.)

1 part quinoa
2 part water
1 cup green or Hatch/Anaheim peppers, chopped
1 cup onion
olive oil
Saute pepper & onion in olive oil.
Cover bowl in microwave
Cook 4 minutes on high, 15 minutes on 40%
Fluff up, let sit for 10 – 15 minutes.
Add cooked quinoa to pepper and onion, mix well.
MP Notes:  Quinoa is a Chenopodium, relative of Chenopodium album, or
Lambsquarter’s, which folks here me talk about, see me grow.  Quinoa is
relatively new to many of us, but traces its roots to the Andes. It’s not
really new, but was domesticated 3 – 4000 years ago!  It is a carb, but it has
significant protein, vitamins and minerals.  Good, nutty rice replacement.
