Fajitas (Wes W.)

3 lbs. Condalia Farms fajitas or round steak
Lowry’s Seasoned Pepper
Worchestershire Sauce
Low Sodium Soy Sauce
1 small Onion, white or yellow
Put the meat in a glass dish, dash with Soy, Worchestershire.
Do both sides.  Sprinkle with Lowry’s Seasoned Pepper.
Allow to marinate for an hour, or a few hours.
Cook over mesquite coals on grill, or gas grill.
Depending on your preference and the fire, a three minutes on each side might be sufficient.
Turn the meat only once.  When the meat is almost done, add the skin from the onion
to the fire, and close the lid of the cooker.
The onion skin smoke adds an incredible flavor to the meat, and adds to appetite, as well!
Wes used to say the locals said the onion skin smoke made you see visions.
I don’t know about that, but I can attest to the great flavor of the fajitas!  The smell also attracts appetites …
We’ve enjoyed this while camping near Terlingua, and all over.
Note:  If possible, don’t substitute for Lowry’s Seasoned Pepper.  It is unique, and it contains no salt.
