Hatch Chile/Shallot/Onion/Garlic/Shitake Demi-Glace Reduction

some Hatch or other chiles, chopped.
some yellow or white onion, chopped
some garlic, minced
some shallots, chopped
1 small box shitake mushrooms, sliced
2 tablespoons More than Gourmet brand veal stock
Saute chiles, onion, garlic, shallots.
Add veal stock and simmer.
MP Note:  This is just incredible!  These guys, who have been to school,
introduced me to veal stock, evidently a chef “secret”, so to speak.
