Cut up two heads of cauliflower.
Put in medium saucepan, with water.
Boil for a good while, maybe 30+ min.
Drain, add lots of butter and ground pepper, mash up, like mashed potatoes.
Only a few folks I have spoken with have ever head of this incredibly simple “recipe”. I was amazed when I first tried this. The taste is great, and you get very few carbs and lots of cruciferous goodness! So, eat as much as you wish! Goes great with beef or chicken or fish!
