Tzatziki Sauce (Shelley P.)

1 small cucumber
1 garlic clove, crushed
1 cup yoghurt
2 teaspoons vineger or lemon juice
1 teaspon chopped fresh dill or you can use fresh mint(I like dill)
salt to taste
Peel cucumber thinly, grate and place in a strainer to drain off excess liquid.
Blend grated cucumber and garlic into yohurt, add binegar or lemon juice and dill.
Season to taste with salt.
Makes 1 1/4 cups (I always double)

This is also served as a salad with cucumber diced instead of grated
