| 7 | medium new or irish potatoes, chunked | |

| 1 | small onion, chunked | |
| 3 | cloves | garlic |
| 3 | cups | water |
| 1 | package | Lipton onion soup mix |
| Brown roast in an iron skillet with olive oil | ||
| Put roast crock pot, big roast will require large oval pot. | ||
| Slice potatoes in two, slice onions in quarters. | ||
| Add potatoes, onion, carrots. | ||
| Add water to crock pot. | ||
| Cook on high until done, about 8 hours, | ||
| or until internal temp is at least 170 F. | ||
