Put the meat in a glass dish, dash with Soy, Worchestershire. |
Do both sides. Sprinkle with Lowry’s Seasoned Pepper. |
Allow to marinate for an hour, or a few hours. |
Cook over mesquite coals on grill, or gas grill. |
Depending on your preference and the fire, a three minutes on each side might be sufficient. |
Turn the meat only once. When the meat is almost done, add the skin from the onion |
to the fire, and close the lid of the cooker. |
The onion skin smoke adds an incredible flavor to the meat, and adds to appetite, as well! |
Wes used to say the locals said the onion skin smoke made you see visions. |
I don’t know about that, but I can attest to the great flavor of the fajitas! The smell also attracts appetites … |
We’ve enjoyed this while camping near Terlingua, and all over. |
Note: If possible, don’t substitute for Lowry’s Seasoned Pepper. It is unique, and it contains no salt. |
