| 4 | cups | firmly packed kale |
| 1 | tablespoon | olive oil |
| 1 | teaspoon | sea salt |
| Pre-heat oven to 375F. | ||
| Wash and trim kale. | ||
| Peel off any tough stems by folding kale in half, stripping stems off. | ||
| Toss in olive oil. | ||
| Roast for 5 minutes on cookie sheet. | ||
| Turn kale over. | ||
| Roast another 7 – 10 minutes, until brown and brittle. | ||
| Remove from oven, sprinkle with sea salt as desired. | ||
