Saute pepper & onion in olive oil. |
Cover bowl in microwave |

Cook 4 minutes on high, 15 minutes on 40% |
Fluff up, let sit for 10 – 15 minutes. |
Add cooked quinoa to pepper and onion, mix well. |

MP Notes: Quinoa is a Chenopodium, relative of Chenopodium album, or |
Lambsquarter’s, which folks here me talk about, see me grow. Quinoa is |
relatively new to many of us, but traces its roots to the Andes. It’s not |
really new, but was domesticated 3 – 4000 years ago! It is a carb, but it has |
significant protein, vitamins and minerals. Good, nutty rice replacement. |
